I am a big fan of "chicken and something." Preheat the oven to 350, pull boneless, skinless chicken breasts out of the fridge, put them in a baking pan, adorn with whatever spices call to me (usually a little oregano, basil, salt, pepper, and a generous squeeze of lemon juice) and toss them in the oven til done. Throw some rice in the rice cooker. (That's my something when I'm really lazy.) Add in a veggie or a fruit as my side dish. It's my brain dead meal.

I always keep some frozen homemade spaghetti sauce in the freezer. Serve with high-fiber noodles and I can go from slacking to dinner in 30 minutes. Love it.

We are big on the ground turkey here too! Ever since my gallbladder went evil earlier this year, I turned to turkey as my friend. :) It's so versatile!
